So until recently I thought we have been living a simple, basic life focusing on the things that really matter. But an article in the newspaper caught my eye and now I have several reminders everyday about things I take for granted. Do I have your curiosity now... the reminders are the newspaper I read in the morning that gets delivered to my door and toilet paper (yes the two go together). It was reported in Cuba there is a shortage of toilet paper so the people are buying day old newspapers to use instead. It also reminds me our country has things we need to work on to improve but we are very fortunate.

I don't try new recipes very often but we had some special guests this weekend and I tried this one and it was pretty good. So I thought I would pass it on!
Ingredients:
1 c. brown sugar 1/2 c. butter 1 t. vanilla 1 egg, beaten 1 1/4 c. flour 1 t. soda 1/4 t. salt 1 1/4 c. quick oatmeal
1 c. chocolate chips 1 T butter 1 c. chopped nuts (I used walnuts) 1 can sweetened condensed milk 1 t. vanilla
Mix the dough together (use the first eight ingredients). Press two thirds of it into a greased 9 x 13 pan. Melt butter, chocolate chips, milk, and vanilla over a double boiler (hint - add the vanilla at the very end, just before adding the nuts). Add the nuts to the chocolate mixture, then pour it over the crust. Sprinkle the top with the remaining dough.
Bake for 25 minutes at 350 degrees.

OK, so I haven't posted on here for a while and thought maybe it was time to again. It has been pretty busy at our house, we finally got around to painting the kitchen and living rooms. Jamie choose "Sands of Time" as the color, and I do have to say it looks really good. The hardest part was picking the color and the second hardest part was painting over our stairs. If you have never been to our house we have a split stairwell and cathedral ceilings so there is a part that goes from the basement floor all the way up to the top of the ceiling. This was the part that we saved for last, it wasn't to bad to do in the end just took some time and some balancing on a 2x10.
I have also been dealing with some medical issues, I won't bore you with the details but long story short everything seems to have turned out just fine.
School is starting back up for both of us next week. I can't believe how fast the summer has gone, it seems like just yesterday I was sitting down to take my finals. This is Jamie's last semester of classes and then she starts on her rotations next spring (round of applause here). I still have a ways to go, but only taking a couple of classes a semester will tend to do that to ya...
